Sombrero Pie
I loved this one as
a kid, so I got the recipe from mom
1 lb. Ground beef
1 large onion sliced
2 ½ c. tomato juice
1 (10 oz.) package frozen corn
1 to 2 T. chili powder
1 t. pepper
1 corn meal pastry ( recipe below)
Corn Meal Pastry
1 c. all-purpose flour
¼ c. cornmeal
½ t. salt
1/3 c. plus 1 T. shortening
3 T. cold water
In a large skillet brown the ground beef and onion. Drain
off the fat. Add the tomato juice, frozen corn, chili powder
and black pepper to taste. Heat to boiling. Reduce heat
and simmer 10 minutes. Heat oven to 400 degrees. Prepare
pastry.
To prepare pastry: Measure flour, cornmeal and salt into
a bowl. Cut in the shortening thoroughly, sprinkle in the
water 1 T. at a time. Mix until all of the flour is moistened.
Gather into a ball and roll into a rectangle (or size needed
for a baking dish)
Pour the meat mixture into an un-greased baking dish (or
a cast-iron skillet) Cover the top with the rolled out pastry.
Bake for 30 to 35 minutes.
