Vegetable Quiche (no eggs!)

 

Perfect for buffets

Preheat oven to 375

1 each green yellow and red bell peppers cut into strips

1 large onion cut into strips

1 large zucchini cut into thin pieces

1 large yellow squash cut into thin pieces

1/2 lb fresh mushrooms sliced sautee in olive oil until just turning tender

 

Fill pie crusts with these ingredients and lightly salt with sea salt

Topping: 3 cups mayonnaise

3 cups shreded mozarella cheese

Mix together and spread on top of pies. Bake in oven until tops are completely golden brown.Can be served hot or cold as a main dish or side dish. Serves 12
