Spinach and Egg Quiche

 

Perfect for buffets

2 pkgs. frozen chopped spinach (drained well)

4 to 6 slices of bacon

4 T. olive oil

Clove of Garlic (minced)

2 T. Parmesean cheese

6 beaten eggs

salt and pepper

Preheat oven to 350 degrees. Cook the 2 package of spinach according to the directions. Saute the bacon until crisp, drain well. Heat the olive oil in a skillet with the clove of minced garlic. Add the spinach, 1/2 tsp. salt and 1/4 tsp. pepper. Spread mixture over the bottom of a casserole dish and sprinkle with the parmesean cheese. Pour the 6 beaten eggs over the mixture, crumble the bacon over the top. Bake at 350 degrees for 30 minutes.
