- Did you know that butter can last up to 9
months in the freezer?
- In the refrigerator apples last up to 3 weeks,
cheese 3 to 6 months, eggs 3 weeks, milk 4 days, and raisons
18 months.
- Egg whites need to be room temperature for
greater volume when whipped.
- To freeze eggs: Spray ice cube trays with
oil. Beat eggs and add 3/4 teaspoon sugar and 1/4 teaspoon
salt for every 1/2 dozen. Pour into ice cube trays and freeze
until firm. Store in airtight containers in the freezer. One
cube equals one egg.

Tips
for Perfect Cookies
- Rolled cookie dough is much easier to handle after it has
been refrigerated for 10 to 30 minutes. This keeps the dough
from sticking even though it may be soft. If not done, the
soft dough will require more flour to prevent sticking.
- Too much flour makes cookies hard and brittle. When rolling,
take out only as much dough as can be easily managed on a
lightly floured board. Flour the rolling pin slightly and
roll lightly to desired thickness.
- Cut shapes close together and keep all trimmings for the
last. Place pans or sheets in the upper third of oven. Watch
the cookies carefully while baking to avoid burning edges.
- When sprinkling sugar on cookies, try putting it in a shaker
such as a salt shaker to save time. ( Kids really love to
do this!)
- I always use real butter when baking cookies.
